Seaboy expected to open in November on North Main

Sept. 5. Seaboy Restaurant and Bar will open on North Main in Cornelius, focusing on “good food, community and sustainability,” sometime in mid-November, according to owner-chef Jonathan Cox.

The 10-table restaurant is going in the former DanielSan space at 20822 North Main. There will be additional patio seating, as well as a chef’s counter and bar, Cox said.

He has led kitchens for resterauteur Jon Dressler of Rare Roots Hospitality, including Dogwood, Fin & Fino Uptown, Fin & Fino Birkdale and Chapter 6.

“We’re a team of locals who care about where our ingredients come from and how they’re prepared… We believe in keeping things simple and honest, and we’re here to make sure every visit feels special,” Cox said.

Cox will remain with Rare Roots until Seaboy opens.

“We are sad to see him go, but we’re excited for what the future holds for him,” said Dressler. “Jonny has always shown top shelf creativity, work ethic, and drive and he will be missed.”
