Seaboy, a new restaurant, will anchor North Main business district

Jonathan Cox opening Sea Boy

Aug. 29. Jonathan Cox, the chef who has led kitchens for restarateur Jon Dressler of Rare Roots Hospitality, will open Seaboy Restaurant and Bar on North Main in Cornelius, focusing on “good food, community and sustainability.”

The 10-table restaurant will be in the former DanielSan space at 20822 North Main.

Cox will remain with Rare Roots until Seaboy opens.

“We are sad to see him go, but we’re excited for what the future holds for him,” said Dressler. “Jonny has always shown top shelf creativity, work ethic, and drive and he will be missed.”

Cox has worked in the kitchen of almost every Rare Roots concept and played an “integral part in particular at Dogwood, Fin & Fino Uptown, Fin & Fino Birkdale and Chapter 6,” Dressler said.
