March 28. By Tripp Liles. The Cowboy restaurant location at 9615 Bailey Road is transforming into The Waterman Fish Bar which plans to open in April. The 4,160 square-foot space will be home to a mid-price range seafood concept that began on Charlotte’s South End.
The concept is led by veteran restaurateur Paul Manley, founder of Sea Level and a partner at Damian Dining noted for Growlers Pourhouse and Crepe Cellar. The Waterman prioritizes sustainable seafood with a menu that emphasizes coastal comfort food.
The interior has been renovated to provide a neighborhood gathering spot with a focus on fun.
Menu
Some highlights include fish n’ chips, whole lobster mac and cheese, fried catfish, crispy oysters and classic lobster rolls.
They will also offer a raw bar with ceviche, oysters on the half shell and shrimp cocktails. In the sharable category they include chargrilled oysters, crispy calamari and hushpuppies served with brown sugar honey butter.
Non-seafood options
There’s also a fried chicken supper, chicken and waffles, and salads as well as an option to build your own burger and braised chicken tacos.
Neighborhood
Of course, 131 Main and the Cork & Cask are just across the street.
Atrium will be building a new 30-bed hospital across Statesville Road with plans to open in 2024.
